Chicken Cordon Blu
Oven baked goodness
8 thin cut boneless skinless chicken breast (this eliminates pounding to flatten meat) 4 slices swiss cheese 4 slices ham multi-grain rice (brown/red/wild/quinoa) I found Minute Rice makes a decent blend to substitute. I clove garlic fresh minced (or 2) 2 cups heavy cream (NOT whipping cream) tablespoon butter salt/pepper parsley
Preheat oven to 350 Spray pyrex oven dish with olive oil spray or lightly brush with grape seed oil layer 4 chicken breast in dish. Top with 1 slice of ham individually on each one Layer remaining chicken breasts on ham. Top with 1 slice swiss cheese Bake in over for 30-35 minutes till slightly brown and meat is not pink If cheese has begun to melt to quickly as it may in some ovens cover with tin foil to omit burning.
Make rice as according to package, for 4 servings or more. I prefer the stove top method vs. microwave. Keep warm set aside
When making the sauce adjust taste of seasonings a little at a time, you can always add more but can not remove!!! Finely mince garlic one good sized clove=1-2 tablespoons (jarred if you prefer but it lacks taste) In sauce pan Saute fresh minced garlic about 2 tablespoons (I like more garlic so I use 2 cloves) in about a tablespoon of butter till soften NOT browned. Add heavy cream (2 cups) parsley, salt and pepper to taste everyone's taste is different so I did not add measurements for this. No one knows your preference more than you do!!! Cook over medium heat about 10-15 minutes. Stir as it reduces down and thickens.
Use 3/4 cup cooked grains and one serving of this healthy version of Chicken Cordon Blu topped with a silky garlic sauce!! Enjoy!!!
